Background to Anago Sharpness Testing Technology

This article provides a brief explanation of the origins of the Anago Knife Sharpness Analyzer.

While commissioned by Meat New Zealand and the Meat Industry Association to improve knife sharpness, we discovered that in order to control and improve knife sharpness you must first be able to objectively measure it. There was no way to do this at the time, and so the Knife Sharpness Analyzer was developed specifically for the purpose. The information provided from this device proved so valuable that several New Zealand meat processors requested the system be made commercially available.
